Stuffed Bell Pepper Soup

I was at a dinner party one evening at a local restaurant. The soup course was a stuffed bell pepper soup and was delicious. I'd ask the owner of the restaurant but he makes the soup nazi look tame :lol: I've googled and found some recipes but i was wondering if anyone had a recipe for it.

This is the recipe I was given to be made in a crockpot. I made it once and it was great.

STUFFED PEPPER SOUP

4-5 bell peppers
1 large onion
3 clove of garlic
Brown 2 lbs. of ground beef
1 large can of Hunts tomato sauce
1 large can of diced tomatoes
3/4 cup of white rice
2 TBS of beef base

Dice and saute onions, garlic and ground beef
Put diced peppers, sauteed onions, garlic and ground beef into crockpot
Add diced tomatoes, tomato sauce, rice and beef base
cook for 8 hours on low
Add water when needed

Oh thanks so much pburgh! Sounds delicious. I might call in sick one day and cook it as i am hesitant to leave the crockpot on when i'm not home.

You can leave out the rice and use 3 or 4 onions. Add a handful caraway seed and you have the hungarian national dish ... but you shall not serve it as soup.
