Strawberry Lemonade......can it and enjoy all year!

#1 Postby petal*pusher » Sun Jun 26, 2005 4:02 pm

Just spent the afternoon cleaning berries.....the strawberry season is just too darned short! A friend at work brings in quart jars of this "mixture" for potlucks.....we talked her into sharing her recipe! It's SO yummy!!

Strawberry Lemonade

4 quarts strawberries, tops removed
4 cups fresh lemon juice (about 16 lemons)
OR
3 cups "ReaLemon" prepared juice
3 quarts water
6 cups sugar

Lemon-Lime soda, Ginger Ale, or 7up when ready to drink!!

In a blender or food processor, puree the strawberries. Place in LARGE kettle. (I had to divide the batch....it's a huge amount)

Add lemon juice (I used the bottled), water, sugar; bring to 165 degrees. (Do NOT boil!)

Remove from heat, skim off foam, pour into hot jars leaving 1/4" space. Put on caps. Process for 15 minutes in boiling water bath.

To serve, mix about 1/3 concentrate with 2/3 soda. Enjoy!

.........p

Sounds like a nice little contraption there. Quite possibly my favorite mixture of drinks is an even amount of: Lemon/Lime Gatorade, Sprite, and Lemonade.

Not sure why it's so excellent, but it's like having fizzy lemonade. Mmmm!
