Saltine Cracker Toffee

#1 Postby CajunMama » Thu Dec 20, 2007 10:13 pm

Saltines
2 sticks butter
2 cups brown sugar
12 oz package of semi-sweet chocolate chips
3/4 cup of chopped pecans

Lay crackers side by side in a 10"x15" cookie sheet with an edge.

Bring butter and sugar to a boil.

Pour mixture over crackers and bake in 400 degree oven for about 5-7 minutes.

Sprinkle chocolate chips over toffee/crackers and return to oven for 30 seconds to melt. Spread chocolate then sprinkle pecans on top. (I usually don't put it back in te oven for the 30 seconds...the chips melt pretty fast on their own.)

Cool in fridge to set and harden about 4 hours +. You can use the freezer if you need them to harden faster.

Crack and enjoy.

This is my niece's recipe. I just made it and it is one of the easiest recipes ever!!!!

This sounds good, I'll try it with rice crackers (I'm a celiac).
