What's was the most organized healthy hurricane / typhoon that has occured the we know of?
Is it Tip, Katrina, Rita, etc... ?

That's really subjective. That is hard to say. Maybe the pros will have something to say. In my opinion, I have seen many healthy looking hurricanes, typhoons, and tropical cyclones.

Ioke, Tip, June '75, Keith, plus many other in WPAC. Ioke was especially well organized at peak. Monica wasn't so bad looking in the Southern Hemisphere either.

Echoing what Steve said....from the WPAC...STYs Angela ('95), Gay ('92) and Yuri ('91) all looked very, very impressive at their peak intensities. The pic of STYs Ivan and Joan ('97 - which IIRC was a very intense season for the WPAC) right next to each other is quite impressive as well. So was Linda ('97) in the EPAC and of course, Wilma ('05) in the ATLC. Forrest ('83) supposedly holds or held the record for intensification rate and bottomed out near 880MB IIRC.
My advice to the OP would be to do some online researching of all of the TCs listed in this thread, plus a list of each basin's most intense TCs that aren't listed here and find an image or images of each TC at or near their respective peak intensities.
After you do that, I imagine picking one over another based upon appearance would be like picking your favorite puppy out of a huge litter of your favorite breed - you'd be guaranteed a "looker".
