Maple Sausage Strata

Maple Sausage Strata
Ingredients (makes 6 servings in a 9"x13" extra deep pan):

6 English muffins, crumbled
1/2 can cream of mushroom soup
1 cup grated Monterey jack cheese
1/2 cup Sour cream
6 eggs
1-1/4 cups milk
1 lb Maple flavored sausage
1/4 Cup grated green pepper.

The night before:
Fry up the sausage and drain. Mix the mushroom soup and the sour cream together. Spray Pam on casserole dish, bottom and sides. Cover bottom of baking pan with crumbled English muffins. Sprinkle 1/2 the sausage over the English muffin, then sprinkle with 1/2 the cheese. Evenly spread the finely grated green peppers over this layer, then spread the mushroom soup / sour cream mixture. Next, layer the remaining sausage and then the remaining cheese. Now beat the eggs and milk together and pour over the top of all the ingredients. Cover with plastic wrap and place in refrigerator. Let stand in refrigerator at least ½ hour, overnight is fine.

In morning:
Preheat oven at 350 degrees and bake strata for 60-75 minutes, until strata is slightly puffed, lightly browned and bubbly.

Remove from the oven and let stand for about ten minutes. Cut and serve. Enjoy!

HHHMMM!!!!! SOUNDS INCREDIBLE!! May have to pace myself between all these stratas or I'll really resemble Jabba!!!
