I had a nice tossed salad, too, Amy...courtesy of Sweet Tomatoes here in Raleigh! :D Also, some great chicken noodle soup...some real nice chunks of chicken and thick noodles in a savory broth, a piece of cornbread, a blueberry muffin, some water...and for dessert...some scrumptious chocolate lava cake!! :D

Tonight we had leftover chicken with noodles and Chili with a tossed salad. The adults and grandson had a bowl of the chicken with noodle or chili, their choice, and a bowl of salad.

Ate out with Dad this evening at K&S Cafeteria in Raleigh and had hamburger steak w/ mushroom gravy, corn, chocolate marble cheesecake w/ raspberry sauce and water. :)

And to top it off! ...had a nice brief January thunderstorm w/ a heavy downpour while at the restaurant!! :D

Daylily, I've been watching what you cook for dinner. Would you invite me over? I bet your a great cook.

I had a baby spinach salad with bacon, orange sections and almonds topped with poppyseed dressing. This has become my favorite salad. I just fry up a pound of bacon, clean my spinach and segment my oranges on Sunday and I'm set for the week.

Pburgh, I would love to invite you over! But I think it would be a long drive to come over:) Lakeland is located halfway between Tampa on the Gulf Coast and Orlando in the interior. I learned to cook from my mother who was a great cook. Even though I can cook some of the recipes she fixed, they never taste the way hers tasted and I have the reicpe down the way she told me it went. One of the recipes I found online that I tweaked, my hubby said was a Keeper. It was a pork tenderloin , sliced into rounds and flattened out to a thickness of about 1/4 inch and dusted with flour and sauted until just barely browned. Set aside until all the meat is browned like this. The take some of the flour and stir into the skillet and make a roux with the oil used for sauteing. Stir the flour and oil mixture until all the oil is absorbed by the flour and stir until slightly golden brown. Have a can of chicken broth handy before starting the flour and oil mix. When the flour and oil is ready, pour the chicken broth in and stir until it begins to thicken. Place the meat back into the gravy and place in the oven. Turn oven to warm,about 250 degrees and hold it there until you finish up the rest of dinner. It is good both with rice or mashed potatoes. Pork tenderloin is a very versatile meat to use and it is very tasty too. I have several recipes for pork tenderloin that I can send to you if you would like to try them. I have been thinking the same thing. I read this post every day just to see what Daylily is having for dinner. I love to cook but I don't come up with the meals like she does. I am having crab legs for dinner today though. :wink:

Thank you Sweetpea. I am just a humble southern cook. Believe it or not I have two adult children who constantly criticize what I cook. Either it is too spicy or they don't like what I fix. Daughter can not handle even the slightest amount of spicy heat in anything and oldest son rarely eats anything that is green in color(he is the post kidney transplant patient) and will frequently fix a bowl of instant Raman noodles for his meal if he does not like what I cook.

Tonight I have a pork tenderloin laid out but have not yet decided how to fix it. We have to go to grandson's school for something tonight so I do not have the foggiest idea of what I would like to do with it.

We didn't get back from grandson's school Reader Workshop thing until just a few minutes ago and hubby said why don't we just get pizza and fix the tenderloin tomorrow. So I will cook it tomorrow.

I guess I won't eat supper until 10 or 11 tonight. My cousin invited me to go out to Peppers to eat Pizza tonight for supper. But, she also invited a friend of hers to come along and she does not get off work until 10! The pizza place stays open until 3 a.m. It is a very popular place for all the college kids to go after they get drunk at the clubs in the downtown area.
