A bowl of Chunky Sirloin n Veggie soup, cornbread crackers, OJ, water and for dessert some more Edy's Grand Mint Chip ice cream.

Well tonight I had my pork tenderloin sliced, flattened and dusted with flour, sauted and set aside while I made the gravy. I made a roux with the flour remaing from dusting the meat and the oil it was sauted in, stirred until the flour absorbed all the oil and poured in two cans of chicken broth, stirring until it had thickened. I then add the meat back into the gravy and hold the pan in the oven whjile I finish up the sides. Tonight my sides were mashed potatoes and brussel sprouts. We had hubby's brother eat with us tonight and he said it was pretty doggone good.

Tonight we had a fried chicken from Publix, and leftover mashed potatoes and gravy from last night and left over veggies. Grandson wasn't here last night to eat the brussel sprouts Eric, he doesn't like them anyway though.

Ate at Western Sizzlin with my mom. She had soup and salad. I had country fried steak, fries, and salad. First time I was able to eat all day since I had a hangover from last night that lasted most of the day.

Arkess, you and I woke up with the same mental message about crockpots today!

I made slow-cooker stew from squash, peppers, okra, onions, stewed tomatoes, chunks of ham & chicken breast, red beans, cajun seasonings, brown rice, and added a mixed greens salad -- plus Pepperidge Farm golden cake (for Kurt -- low-fat/sugar-free ginger-lemon bars for me) for dessert.
