Killer Marinara sauce

For the best Marinara sauce try frying some ground onions and carrots in vegetable oil and adding it to the sauce while it simmers. For 30 gallons of sauce I used about 7 or 8 good sized onions and about the same number of average sized carrots. The onions reduce the acidity of the sauce and sweeten it...making it possible to use less sugar. Too much sugar in sauce is not good for flavor IMO. Spice the sauce to taste; I reccomend little salt and about 1 cup of sugar per gallon of sauce. Add pepper, garlic powder...or whatever suits u. I made sauce for 10 years in the restaurant where i am now a delivery driver...never had a single complaint.
