Serra cheese

Portugal's most esteemed cheese is Serra, tailor-made for lovers of Vacherin. When ripe, the satiny, fluent sheep's milk cheese is scooped out with a spoon. It's made in rounds of about a pound and a half and best purchased whole from December to April. Just be sure the top of the cheese gives under a little pressure; otherwise it is underripe. At Artisanal it is $28 a pound, at Fairway it is $18.76 a pound and at Eli's Manhattan it is $29.99 a pound.




anyone ever heard of this? it doesnt sound very good to me....

Never heard of it, but I'm such a cheese freak I'd try it!

i wish there was more info about how it tasted or smelled. if i cant get past the smell, it's not getting past the lips either...
