Leftover Turkey

Post here what you're doing with your turkey leftovers
We had the required turkey sandwiches already and we've been picking at the leftover pieces in the fridge.
Tonight: Spaghetti with turkey tomato sauce!

I make what my first MIL called - Turkey Manhattens: chopped turkey/celery/onions, simmered in chicken broth, various spices and a bay leaf. After 30 minutes thicken with milk and flour. Spoon over toast. Yum!

We had to throw out the turkey after thanksgiving because my refridgerator went on the fritz due to grandson leaving the door open Wed for who knows how long and the automatic defrost froze up trying to cool the whole house when the door was open.

My mom's eating Turkey Sandwiches for lunch everyday at work. I've already fed some dark meat pieces to the cats, and I'm sure they're hungry for more.

Here's a question - who here roasts a turkey on a regular basis? I do! About 8 or more times a year. You can find whole, fresh turkeys at the grocery store, at very good prices, per pound. Off seasonal times though. So when we're in the mood for turkey, I just buy a small one and roast it. Any time other than the middle of the summer, when I don't want to heat the house up more.
We just don't have turkey once a year, more like year-round!

Yes! I will buy the fresh turkey breast sometimes and throw it in the oven!! I couldnt handle only having turkey once a year!!

I made a wonderful potpie for my son-in-law. Turkey, gravy, potatoes, onions, mushrooms, peas, carrots and celery with homemade pie dough.
Always turkey sandwiches with pickle and mayo.
