Pumpkin Cake

This is a simple, yet very tasty cake. A friend of mine shared the recipe and I tried it out for Thanksgiving. Among a sea of homemade pies being eaten, the cake didn't last long either. If you need to make something quick, this is perfect.

1 Spice cake mix
1 can of pumpkin
1/3 cup of water

Mix everything together and bake according to the cake mix directions. You do not need to add eggs and oil. I used a 9 x 13 pan and baked it for 30 - 35 minutes. It's really moist and yummy! She doesn't add icing to it, but I added a classic white icing and we loved it. I think a cream cheese icing would be good as well and I'll probably try that next time, to see which way we like it best.
