Ok...after my thread about trying to not eat fresh seafood during Lent...my husband is "cooking". He's picking up dinner at a local restaurant. He volunteered to do this so who I am to argue with him!

I'm getting: Tabasco Jack Shrimp - jumbo shrimp stuffed with pepper jack cheese, grilled tasso and a dash of TABASCO®, wrapped in apple wood bacon, fried to perfection and set in crawfish cardinale sauce" and Lump Crabmeat Au Gratin.

:uarrow: Oh my goodness mama that sounds absolutly fabulous!! That sounds like my kind of meal there.

We went out to Ale House and I had a seafood platter with shrimp, scallops, fish, and clam strips. I swor I would not get seafood there again, but it had been so long I forgot how blah it was. Next time I will be getting steak, or stick with the appitizers. :roll:

Grilled turkey bratwurst, brown-sugar baked beans, veggie pancakes (like potato pancakes, but not made of potato) with sour cream; root beer float for dessert! :cheesy:

Had to work tonight from 5-10. So, I stopped off at Burger King to give me a quick bite before work. So late lunch/early dinner. First and only time I ate today. But, felt guilty because I ate a whopper Jr. w/cheese and onion rings. Should of ordered a salad. I was doing fairly decent on the diet all week. But, I allow myself to cheat on weekends.

Tonight we went to a restaurant called Smokey Bones where I had BBQ beef brisket with steamed broccoli and cole slaw. Hubby had a honey glazed salmon with mashed potaoes and broccoli. Grandson had fried chicken tenders with french fries. Daughter had a pear and Spinach salad with a grilled chicken breast on it. Today was grandson's 6th birthday and he spent it at Disney World with his mom and Uncle Todd. Grandpa and Grandma were glad to have a day free to ourselves.

Tonight we had home made tacos with guacamole, chopped onion , chopped tomatoes, shredded lettuce, and shredded cheese. grandson wanted me to make tacos so I went to grocery store and got everything and then after I fixed it , he decided he wasn't hungry and didn't eat. He went to bed without eating anything.

Early dinner with my sis at Sweet Tomatoes (salad bar-type chain restaurant): yummy everything-but-the-kitchen-sink plate of salad, small portions of cold pasta and potato salads, creamy mushroom soup, plus cornbread, focaccia, and zucchini muffins to die for. We took a pass on the pasta, chili, 3 other soups, baked sweet potatoes, loaded baked potatoes, jello, puddings, and fruits which were also available. For dessert, my sis chose chocolate lava cake, and I had chocolate-vanilla twist soft-serve yogurt sprinkled liberally with chopped nuts and granola. All for $7.39 each (coupon price)!

Here is the recipe
Chicken Riggies

1 stick butter, melted
1 onion minced
3 cloves garlic, minced
20 oz. jar of sweet peppers (sliced with seeds removed)
3 sliced hot cherry peppers (packed in jar with oil)

Saute above ingredients.

Add:

1 cup parmigiano cheese
2 lbs. boneless chicken breast, cubed
1 can chicken broth
1 can tomato sauce (15 oz)

Cook for 1 hour. Pour over 1 1/2 boxes of cooked Rigatoni pasta. Serve with fresh Italian bread.
Note on the cheese, sprinkle a little at a time and let it melt before stirring it in.

You can make it as spicy as you like by increasing the hot peppers, you can also use chicken parts instead of just the breast pieces.

I find the peppers in the pickle aisle at Publix in case you are wondering. I use the banana pepper slices and the hot and sweet banana peppers slices. I have to chop the hot and sweet very fine so as to not shock my daughter when she eats it. She is a wimp when it comes to anything spicy hot. Also make sure to have a loaf or two of a good French or Cuban bread to soak up the sauce.

I know my family will love that, DayLilly I am going to put that on my menu for next week. I think I will use the sweet red peppers packed in oil instead of the banana. When I make chicken spaghetti I usually end up putting in some red peppers, but this sounds great. Thanks for sharing the recipe! :D
