Tonight was homemade butternut squash/carrot soup, baby spinach & baby mixed greens salad, Smart Ones mac & cheese, and Dr. Krackers' multi-grain pumpkin seed crackers with Smart Balance spread.

Can you tell I've begun 2006 with a fierce determination to eat in a more healthy manner?? :idea:

Tonight was a glass of red wine; slow-cooker pot roast with turnips, carrots, green beans, and celery; combo of no-yolks and soy noodles; tossed salad; and for dessert (later) a new recipe for Epiphany bread (batter dough with chopped apricots, mandarin orange sections, almonds, maraschino cherries, coconut, and (sugar-free) chocolate chips. I used egg substitute, Splenda, and a half-cup of wheat flour for a half-cup of the total white flour required.

Tonight for us it was a meatloaf made with lean beef, onions, a small amount of parmesan cheese grated over the meat, an envelope of onion soup mix and two eggs beaten. Then Baked for an hour and half before brushing the top with a small amount of BBQ sauce. The sides were small ears of corn on the cob with butter and green beans. Grandson ate two ears of corn, two servings of beans and one slice of the meatloaf. Normally he wants meat and no veggies.

At least your grandson ate some corn and beans. My 8-yr old nephew I don't believe has ever had a veggie in his life except for mashed potatoes...but no greens, yellows, oranges, etc. My 11-yr old niece has been doing better of late by eating a small tossed salad every now and then. My folks and I have tried for years subtley hinting at times that their parents need to get them to try veggies (expand the territory so to say) but to no avail.

Skywatch,
When my grandson will not eat his veggies, we say no meat until he does eat them. He will then eat some of the veggies if not all of them but he does not get just meat for his meal. I always fix at least one veggie if I am fixing potatoes and gravy so there will be a color contrast on the plate. All bland looking foods on a plate is not real appetizing, if you know what I mean. At least I know he will eat corn on the cob and green beans so I tend to fix them frequently.

Tonight it will be a small pot roast with no veggies, just some gravy, I will fix a pot of rice to go with that and then fix some green beans or broccoli.

Bubbalous shredded pork, baked beans, cole slaw, collard greens, french fries, fried okra, and maybe a salad and bread. Yummy!!!! :P

We used a gift certificate at Shootouts (local steak/seafood place). I had a glass of Zinfandel, house salad w/balsamic vinaigrette dressing, crab cakes, and a side of steamed broccoli. Kurt ordered sea bass for his entree and mixed veggies for a side. I'm having coffee at home right now!

Tonight it is chickenwith noodles, carrots, celery and onions. We boil the chicken till it falls off the bone and then debone what hasn't come off. Then we add the noodles and veggies to the broth. I then add enough water to make it soupier.
