I've wondered if it's insulting to Mexicans that Cinco De Mayo has become associated with getting drunk here in the States. Maybe that's what they do south of the border too.
And you just know that St. Patrick is rolling his eyes every March 17th; that his feast day has become synonymous with drinking large amounts of green beer.

We "celebrated" last night....sort of. My best friend's hubby made a spicy Mexican soup made with grilled veggies (yup, he actually cooked them on the grill outside, then came in and chopped them up to put in the soup), poblano peppers stuffed with shrimp and crabmeat filling topped with cream sauce and salsa, and chipotle chicken (something from a K-Paul's cookbook he got in Nawlins). The man loves to cook and his food is wonderful! We were all full afterwards.
And then a couple of people had tequila.

Actually, Cinco de Mayo is a lesser celebration than Mexican Independence Day in Septmber. The day celebrates the victory of the Mexican forces over the FRENCH Army at the battle of Puebla in the 1860's. The battle sort of marked the decline of French military prowess since their puppet Emperor of Mexico, Maximillian, was deposed and executed in 1868 and then in 1870 they fought the first of three wars against Germany-they lost the first, were badly mauled in the second and had to be saved by the US, totally out of the third in one month. Then they (like the US) were totally humiliated at the hands of the Vietnamese under under Uncle HO and his Generals. With a record like that is it any wonder the French are chicken-heck I'd be afraid to go to war with a military like that myself. All my Mexican neighbors celebrated last weekend since they have to work today.
