Very medium rare for me, rare for hubby. The best steak I ever had was just on the point of being rare but very tender, just melted in my mouth. Of course having a baked tater and sald made it even better.

In a restaurant, I order my steak medium since then it's usually cooked slightly less than that. When I cook it myself I have it medium rare since I like a juicy steak.

Mmmm... steaks!

When I eat beef steaks, I typically go for medium-rare. However, when I go for bison steaks, I'll go medium.

Last night after posting to this thread, I went to the store and bought some steaks, two sweet potatoes, and salad makings. I seared the steaks in a cast iron skillet on the stove for a couple of minutes on each side and they came out peerfect. I fixed enough so that there was several steaks left over for today.

medium rare all the way. that's where all the flavor is. Cajun style is by far the best though, when cooked properly....with some garlic mashed potatoes and veggies. *drool
