I tried a new recipe: Cauliflower-Ham Casserole. It sounds gross, but tasted quite delicious: Cauliflower, ham, white sauce, sour cream, shredded cheese, soft bread crumb w/butter topping. I added a chopped romaine salad with creamy Italian dressing. Key lime pie is coming up for dessert later! :P

Went out to Shells tonight. Had grilled Mahi with a creme sauce and 2 skewers of shrimp with rice and vegi's. I love seafood. Awesome dinner. :P

Went out to eat with my parents. We went to Big Al's in Houma. It is a seafood place. The 3 of us split an onion mum as an appetizer. I had the fried shrimp with boiled pototoes. (got too full and had to box the rest up to go, so it will be tomorrows lunch) My mom had the seafood gumbo. And my dad had the boiled crawfish with the boiled pototoes. I ate a few of his crawfish and they were soo good. Big Al's is the best and most popular place to go for seafood in Houma on a Friday night.

Have we all been on diets since Saturday? :P

Tonight I made large tomatoes stuffed with celery-green pepper-tuna salad, plus mixed baby greens & crisp-tender green beans. I'm going to mix up some sugar-free chocolate fudge pudding and cool whip for a late dessert.

The tomatoes, pepper, and beans came from a local farm. Every other week for $35 I receive a large box of fresh-picked veggies. The season began in November and ends in April. So far we've enjoyed red tomatoes, yellow tomatoes, various types of lettuce, various herbs, chard, eggplants, yellow squash, pattypan squash, zucchini, corn, cauliflower, carrots, and green beans.

Ate out this evening w/ the folks at The Forks Cafeteria in nearby Wake Forest, NC.

Had meatloaf, corn, garden peas, coconut cream pie and water. :)
