Last night, my sister made polenta with alfredo sauce, and I added a farm-fresh tomato-and-lettuce salad with creamy Parmesan dressing. Delicious!

Yesterday when I was in Houston, I ate at Pappasito's! YUMMY! We don't have one here, so I eat there often when I'm in Houston. I had chili con queso, guacamole, and chicken and beef fajitas. Boy was it delicious! That's all I ate all day and I still have leftovers for tonight! (except the guacamole...had to finish it off last night so it didn't turn brown on me)
It's not like most Mexican restaurants...much better.

YUMMY!

I just arrived home (late) from classes. I'm going to start making home-made vegetarian chili and cornbread for tonight's dinner as soon as I get back from the gym. :)

I finally got my pizza today. After the thread yesterday, it made me really crave pizza. So, my co-worker and I went on our lunch break to the Pizza Hut 5 minutes away from work. We ate off the pizza buffet. We ate around 1 p.m. and I am still full. So, I probably won't eat dinner tonight.

Tonight was take-out Thai: vegetarian spring rolls, vegetarian fried rice, vegetarian pad thai, and chicken panang curry (mild because my sister can't handle medium, let alone hot!) YUM! :D

Shrimp fettuccine. I'm also cooking a double recipe of chicken & sausage gumbo for my son for mardi gras day. My house is going to smell good tonight!
