Last night was a Bob Evans night here.......roast turkey and mashed potatoes, both BE brand. Fully cooked but you heat both up on the stovetop. I just added bread, a salad and fresh vegetables (sliced zuchinni and yellow squash). Easy-easy and so good!
So yeah I cheated.....LOL
Today I'm making beef stew, from scratch. It's a cold wintery day here....

Since I'm teaching M + W evenings now, I eat lunch/dinner at ~3 (so far, my husband and sister have had to fend for themselves on those days). Tonight, Kurt had a commission meeting so he came home for a quick sandwich before going back to City Hall; Joyce made an avocado pita sandwich plus a tossed salad about an hour later; and I grabbed a bowl of oatmeal after that. If I can manage to finish grading final exams and papers AND put together an artichoke quiche before I leave for class tomorrow, the two of them will have a semi-decent dinner -- and there might even be left-overs for me at 9:30.
Now, if I could just start off with sangria, Cajunmama...!

- Baked spaghetti casserole. Boil spaghetti, drain, toss with 1/2 cup of milk and one beaten egg. Place in greased casserole, spoon spaghetti/pizza sauce on top and add your favorite pizza like toppings and cheese. Bake @ 350 for 20-30 minutes, as you would a pizza. My family loves this simple-simple dish. I found it years ago in a women's magazine......I think I posted a more complete recipe for this dish on the Community Forum (somewhere!).

St. Louis style ribs, corn on the cob, and baked beans. These ribs were sooooo good, and easy. I usually put them on the grill but tonight I made these in the oven and will be doing it again. All you do is soak the ribs (about 2lbs. St. louis) with a bottle of bbq sauce in tin foil, and wrap tightley, throw it in fridg. all day, and then pop it in a 300* oven for 2 1/2 hours. The bones just fell out. Ohhhh so good.
