Vegetables In Glass Jars

I have seen these in restaurants and on cruise ships and think they are darling. Big glass jars, etc. filled with real vegetables and liquid in jars.
Have you ever done this? I have a big island in the kitchen and need something cute to fill up some of the space. What is in the liquid and how long does it last?

I don't think you have a Walmart, but I saw some in our local store the other day for $1.00 a bottle...they were cute :)

Hey, we have everything here, Super Walmarts, Sam's Club, Cosco, Pier 1..... You name it, we have every store that is in the US.
