I found this recipe in people magazine. I have to give basic recipe (i changed it up a bit, deleting some stuff i didn't want to add) credit to Paula Deen's sons...Jamie and Bobby.
1.5 lbs. ground beef
1 cup seasoned breadcrumbs
3 large eggs, slightly beaten
1 clove of garlic, minced
1/2 medium onion, finely chopped (if you don't like crunchy onions i would suggest sauteeing your onions beforehand)
salt & pepper
Preheat your oven to 350. Lightly grease a 12 cup muffin tin.
Combine all ingredients, divide into 12 servings. Form into balls and place in muffin tin. With the palm of your hand press the meat mixture down into the pan.
Bake for 25 minutes. Remove from oven and top with kraft honey bbq sauce. Return the meatloaves to the oven and bake for an additional 10 minutes.

Hey, an easy recipe - thanks, Kathy! I actually have all of those ingredients around
the house except for breadcrumbs - but, if you're a cheapster like me, you can always
substitute those with 1 cup of minute oats!

The wonderful thing is that the leftovers can be frozen in freezer bags, then you
could take out what you want as needed, and warm them in a 300°F oven for
approx. 15-20 minutes. I do that with leftover meatloaf slices, so I'd bet it would be
the same for these, too. I'll have to give these a try!
