Looking at the latest satellite imagery, Erika is beginning to wrap convection around a clear center of circulation. I am afraid that she may start a rapid intensification soon.
I am not ruling out a Cat 2 by any means. The only saving grace may be her rapid forward speed not leaving her as much time over water.
