Wilma's IR imagery photo Cycloneye posted with that tiny eye is for me the most impressive. I am still awestruck looking at that image.

Rita is a victim of what I call the "Hurricane Edna Effect", just like 1954 in which Carol & Hazel overshadowed the middle storm in 2005 Rita is overshadowed by her more infamous sisters Katrina & Wilma.

I gotta say Igor was my favorite satellite image of all time, but some other memorable ones:
Super Typhoon Megi from last year was incredible. An absolute monster with bands everywhere:

Also I think Hurricane Dean making landfall with such a distinct eye throughout landfall was extremely impressive. I could only imagine the destruction it caused in the Yucatan:
