I need some new recipes for main dish items that can simmer on the stove. Not crock pot ones. My family just doesn't like crock pot meals anymore. Husband says they're overcooked, or just don't taste well. Anyway, I just want recipes I can start around 4 or 5, and let simmer on low until dinner time - around 6. I've made chili and vegetable or chicken noodle soup so many times now, my family is getting tired of those recipes. My sister-in-law makes a wonderful chicken/rice/peas type dish that simmers all day, in a small amount of liquid but the easy part is you just throw it together and then simmer it. Stirring a few times. I'm looking for recipes like that.

LOL, Mary! I'm just the opposite - I need crockpot recipes. I asked for a new crockpot for Christmas and my grandparents gave me a really nice one with different temp and time settings. But besides beans or a roast, I'm not really sure what to cook in it.
I know it should be easy to put everything in there in the morning, turn it on, let it cook all day, and then come home in the evening to a fully-cooked meal. It's just that I need to know what to cook.

Hey maybe I can change the topic heading?!! I've had two crock pots thru the years. My first was bought in 75, I know I'm showing my age. It was deep and the crock could not be removed for washing. But I'd just soak it and use the hose attachment on my sink to wash it. The one we have now is wide and the crock can be removed. I don't know if it's b/c it's wide or the lid doesn't fit well, but foods just don't cook well in it at all. My husband is picky about meats, he hates when they're overcooked. And our crock pot overcooks them, even on low for only 4 hours. I prefer a pot roast cooked at 325 in the oven, using an old cast iron skillet with a tight fitting lid much better. The meat and vegetables all come out much more tender. But if you need to simmer something for 8 or 10 hours, the way to go is a crock pot. I have an old recipe book that came with my first crock pot. I'll dig that up for you. There is a good beef stew recipe in there I've made a lot.
I'm just looking for light type meals (chicken or turkey preferably) that can simmer on low, in a dutch oven on the stove. We don't all eat at the same time some evenings and we can each just fill our plates when we're home.

Miss Mary, here is one that you can simmer on top of the stove or in the oven for an hour or so. Take stew beef , 1 envelope onion soup mix, one can cream of mushroom soup or chicken your choice, and one cup of ginger ale. Put beef in dutch oven, sprinkle with onion soup mix, pour soup and ginger ale over the meat. Stir to just combine everything. Then put cover on and simmer or bake in oven at 275 or 300 degrees for slower cooking. It is called No Peek Stew. It sounds like it wouldn't be good but it is SO GOOD . When I fix it, I serve it over rice or mashed potatoes. Even noodles would be good with it. Hope your family likes it.
