An at-home recipe for all you bar patrons....
1 gallon bottle/jug of apple juice
1 gallon bottle/jug of apple cider
3 or 4 cinnamon sticks (not ground cinnamon, needs to be sticks)
2 cups of sugar
1 750ml bottle of Everclear
In a really BIG pan (I used a 15 quart spaghetti boiler), pour in the apple juice, cider, cinnamon sticks, and sugar. Bring to boil. Keep going for a hard boil for about 30-45 minutes. The longer you boil, you more cinnamon you get in the drink.
Let it chill. For many hours. Overnight is good. You don't want the Everclear to evaporate.
When chilled, add 1/2 to 3/4 of the bottle of Everclear. The entire bottle WILL knock everyone out. Believe me, I still get complaints from friends who couldn't make it to midnight at Y2K.

I find it to be a good autumn/winter drink. Of course, I have friends say that if you warm it back up (not to boil, the Everclear will boil away) and serve it like warm cider, it works as well. It brings that apple taste back with a vengence.
And the beauty of all of this, is that the Everclear is hidden in the flavor. You don't really know what is until it hits you.....
