That's not an uncommon thing in powerful hurricanes. A new, larger eyewall forms around the existing eye. Over time, it contracts, squeezing the inner eye until it collapses. This is generally accompanied by a weakening of the storm. After a brief period, the new larger eye clears out and intensification resumes.
This is what you will see referred to as an "ERC" or "eyewall replacement cycle."

While it might not happen in a full blown Hurricane, it did happen in a tropical Storm off the Texas coast about thirty years ago. A disorganized system formed a new stronger center of circulation, but for a while, it had two different eyes and circulation centers.
