Patricia - I found a veg soup recipe off the back of Kroger brand canned vegetable broth. My daughter is a vegetarian now so I thought I'd try it. It's very good! I did change a few things so what I'll do is type it as I made it. But look for these cans if you have a Kroger store near you. Also Knorr vegetable broth cubes are very tasty. I ended up adding more water and throwing one of these cubes in. It tasted even better! I never knew veg broth cubes existed until Nina went vegetarian.
Okay here it is:
Hearty Healthy Vegetable Soup
2 medium carrots, sliced
1 medium onion, chopped
1 large potato, peeled and cubed
1 large turnip, peeled and cubed
1 cup shredded cabbage
1 or 2 stalks celery, sliced
1 or 2 Roma tomatoes, cored/seeded and chopped
3 cans (14.5 ounce) cans Kroger Vegetable Broth
1 11 oz can V-8 juice (size of soda pop can)
3 tsp dried parsley
1 Tbsp chopped garlic
1 tsp dried basil
1 tsp dried oregano
salt and pepper, to taste
cooked pasta shapes
add water occasionally if soup gets too thick
Put carrots, onion, potato, turnip, cabbage, celery and tomatoes in 8 quart stockpot. Add vegetable broth, V 8 juice, parsley, garlic, basil and oregano. Bring to a boil then simmer. Cover and simmer for 30 minutes or until vegetables are tender. Meanwhile, cook any type pasta you like - shells, macaroni shapes, and drain. Don't add them just yet. Using a soup ladle, scoop out a few cups of vegetables and some broth to a blender. Blend until smooth. Return to the pot, with the rest of the soup. Now add the pasta, a little at a time until you have just the right amount of soup and pasta shapes. Simmer for about 10 or 15 more minutes, stirring a few times to blend well. Add salt and peper to taste.
Serves 12. Soup can be made 5 days ahead. Cover and refridgerate.
My kids love this soup! Feel free to add any vegetables you like to eat. It calls for fresh mushrooms but I've never added them. A turnip adds a nice flavor, something you just wouldn't think about it until you add it once. It calls for canned tomatoes too but I prefer adding V 8 juice (this really adds extra flavor) and using fresh seeded Roma tomatoes. I hate tomato seeds in soups or dishes!
