The main thing about cleaning shrimp is removing the gut, and you do that by peeling off and the outer shell removing the head then running a knife down the back but not too deep you see a single vein you remove that, that is the gut, I usually leave the tail on it provides a nice little handle and its decorative.

Patricia - I found a veg soup recipe off the back of Kroger brand canned vegetable broth. My daughter is a vegetarian now so I thought I'd try it. It's very good! I did change a few things so what I'll do is type it as I made it. But look for these cans if you have a Kroger store near you. Also Knorr vegetable broth cubes are very tasty. I ended up adding more water and throwing one of these cubes in. It tasted even better! I never knew veg broth cubes existed until Nina went vegetarian.

Okay here it is:

Hearty Healthy Vegetable Soup

2 medium carrots, sliced
1 medium onion, chopped
1 large potato, peeled and cubed
1 large turnip, peeled and cubed
1 cup shredded cabbage
1 or 2 stalks celery, sliced
1 or 2 Roma tomatoes, cored/seeded and chopped
3 cans (14.5 ounce) cans Kroger Vegetable Broth
1 11 oz can V-8 juice (size of soda pop can)
3 tsp dried parsley
1 Tbsp chopped garlic
1 tsp dried basil
1 tsp dried oregano
salt and pepper, to taste
cooked pasta shapes
add water occasionally if soup gets too thick

Put carrots, onion, potato, turnip, cabbage, celery and tomatoes in 8 quart stockpot. Add vegetable broth, V 8 juice, parsley, garlic, basil and oregano. Bring to a boil then simmer. Cover and simmer for 30 minutes or until vegetables are tender. Meanwhile, cook any type pasta you like - shells, macaroni shapes, and drain. Don't add them just yet. Using a soup ladle, scoop out a few cups of vegetables and some broth to a blender. Blend until smooth. Return to the pot, with the rest of the soup. Now add the pasta, a little at a time until you have just the right amount of soup and pasta shapes. Simmer for about 10 or 15 more minutes, stirring a few times to blend well. Add salt and peper to taste.

Serves 12. Soup can be made 5 days ahead. Cover and refridgerate.

My kids love this soup! Feel free to add any vegetables you like to eat. It calls for fresh mushrooms but I've never added them. A turnip adds a nice flavor, something you just wouldn't think about it until you add it once. It calls for canned tomatoes too but I prefer adding V 8 juice (this really adds extra flavor) and using fresh seeded Roma tomatoes. I hate tomato seeds in soups or dishes!

Patricia - I meant to add that anyone could add a soup bone to this recipe and even beef if they preferred. The vegetable broth and Knorr's vegetable bouillon cubes really do add extra flavor I think. What I like about this recipe is that it is 100% meat free and it still tastes great! I have all the ingredients on hand and it's a cold-cold day here in Cincinnati. I think Vegetable Soup just may be what's on the menu for tonight! Add a salad and bread, and we're all set!

PS - edit....I made the soup and it turned out fine, except I completely forgot to puree part of it, before adding the pasta! Dang. Don't forget that part. It does thicken it up a bit. Oh well, it just one of those crazy days with the kids off, why I ever thought I could pull off a pot of homemade veg soup is beyond me!

SINCE I just found this portion of S2K, I WILL have to submit some recipes from my wife, especially something called "Pumpkin Roll". If you have not had this before you WILL want it again and again and again.....

Coming soon - Yet another Chili recipe and some Chicken ideas!!

We are running out of food for the month (we have enough to last until the 3rd, "payday"), and we have two huge cans of tuna.

Debi asked me to request some recipes that will feed three people (she is notorious for lack of imagination in cooking). :roll:

Bill, I don't have any good tuna recipes, but you can find anything on http://www.recipeland.com/find.epl or http://www.cooks.com/ by just typing in the ingredient, you'll get a slew of results. Bon appetit! :D

Debi intends to try that recipe Saturday...if she has time, or if she isn't flat on her back (she's been complaining of stomach-back pain lately; some of it is definitely kidney-stone related, some...well, we have no idea).

I'd have E-mailed back, but coppertop HAD to have the PC (and dominated it all afternoon from 3-10 pm)... :roll:

Bill - You're welcome! What I most liked about that recipe was that it was very different from the typical tuna/noodle/potato chip recipes you find. My family raved about it first few times. You can vary it I would imagine. Add a cup of peas, red onions instead of green onions, parmesan cheese instead of grated cheese. Main ingredients are just rice, tuna, bread crumbs (I like the Progresso ones that come in a can), eggs, etc.

Tell Debi I hope she feels better and it's just a kidney stone again.

Small<Good for soups and such??? Average< Good for Steaming, Fried, and sauteing ??? Large< Best for baking such as the dish with crabmeat i mentioned about above and Sauteing???

Let me know something...........

BTW you can and hopefully did freeze them :D ...................Thats alot of shrimp as well :eek: ........



Shrimp Scampi!! lol. Believe it or not KOW I actually did freeze the shrimp. :) I am still waiting for that recipe. You forgot didn't you? :( :lol:
